Baked Feta & Boursin Pasta

This is an updated version of Baked Feta Pasta. This version adds in Boursin Cheese. It simplifies the recipe by omitting some of the herbs and garlic, and adding in the Boursin Garlic and Herb cheese, it also adds a lot of creaminess. We can't decide which is better, I think it's a tie for our family. Enjoy!

Ingredients

8oz feta cheese
-
8oz Boursin Cheese
-
16oz cherry tomatoes
-
½ yellow onion, chopped
-
1-2 garlic cloves, optional
-
½ cup olive oil
-
½ tsp dried basil, optional
-
½ tsp dried oregano, optional
-
½ tsp red pepper flakes, optional
-
½ tsp ground black pepper
-
16oz pasta of choice

Mozzarella & Parmesan Cheese for top, optional
Directions
Preheat the oven to 465F° with the baking rack in the middle.
In a 7"x10" baking dish (or similar size) toss together cherry tomatoes, chopped onion, garlic cloves, dried basil, oregano, red pepper flakes, black pepper (if using), and most of the olive oil (reserve about 1-2 tablespoons).
Add the block of Feta and Boursin cheeses in the middle and sprinke with the remainder of the olive oil.
Bake uncovered for about 35 minutes depending on how much browning you like on the tomatoes and cheese (see note 1). The tomatoes should be well golden-brown and soft, and the feta cheese slightly brown and melty soft.
Meanwhile, bring a large pot of water to a boil, season it with salt generously, and cook the pasta according to directions.
Once the Feta, Boursin, and the tomatoes are baked, mash the cheeses and tomatoes into a smooth mixture, then add the drained pasta and keep stirring until the pasta is well coated in the sauce.
Plate and top with Mozzarella and Parmesan.

Recipe Note
1: I like to turn the broiler on for the last 2-3 minutes for extra browning.
2: The herbs are optional because you are adding in the Boursin Cheese. You can always add them for extra flavoring.
