Do you remember 2 Broke Girls with their Beer Batter Maple Bacon Spring Break Cupcake? Well I took that flavor and Crumbl style cookies and made these soft baked Beer Batter Maple Bacon Cookies! Live, Love, Eat Sweets!
Ingredients

1 cup Butter, softened

2 cups Sugar
-
2 tsp Vanilla Extract
-
2 Eggs
-
¼ cup Beer (I used a pale ale)

⅓ cup Heavy Cream
-
5 cups Flour
-
2 tbsp Cornstarch
-
½ tsp Salt
-
1 tbsp Baking Powder
-
2 tsp Baking Soda
- 1 cup (2 sticks) Butter, softened
-
4oz Cream Cheese, softened
-
6 cups Powdered Sugar
-
1 tsp Maple Sugar (brown sugar works too)

1 tbsp Vanilla Extract
-
2 tbsp Maple Syrup
- 12-15 slices Bacon
-
Brown Sugar, optional

Directions
- Preheat oven to 395° and place bacon on a baking sheet, sprinkle brown sugar if using. Cook for 9 minutes and then flip and cook for an additional 3-4 minutes, depending on how you like your bacon.
Add your butter and sugar to the bowl, and beat on high until well combined.
Add the vanilla extract and the eggs, and mix well.
With the mixer on slow, add the heavy cream and beer.
Turn off the mixer, and add the flour, cornstarch, salt, baking powder, and baking soda. Mix on low, until just combined. Make sure you do not see any flour but do not over-mix the dough.
Divide into 2-4 sections, form each section into disks, and wrap each one separately in plastic wrap. Refrigerate for 2 hours or 30 minutes in the freezer.
Preheat oven to 450°F place parchment paper on a baking sheet. Using a large cookie/ice cream scoop dough onto a cookie sheet. Only 6 per sheet.
Bake for 11-14 minutes (bake until bottoms are done and tops are no longer shiny).
Remove from the oven and allow the cookies to cool on a cooling rack.
While cookies are baking and cooling crumble bacon (when cooled) and make your icing.
Mix butter and cream cheese in a mixing bowl.
Add half the sugar, mix, and add the remaining sugar. Mix until combined.
Add sugar, vanilla extract, and maple syrup, and mix on medium-high speed until light and fluffy.
Place in a piping bag if you're going to pipe.
Spread or pipe your icing and top with crumbled bacon.
