Brownies with Easy Strawberry Bavarian Cream

This is a great Brownie recipe with the lovely addition of an easy Bavarian Cream filling to make the brownies even more delicious!
Ingredients
- 4 ounces Semisweet Chocolate Chips

¾ cup Salted Butter, cut into chunks

½ cup Unsweetened Cocoa Powder
-
1 cup Granulated Sugar
-
½ cup Light Brown Sugar
-
3 large Eggs, room temperature
-
2 teaspoons Vanilla Extract
-
¾ cup All-Purpose Flour
-
½ teaspoon Salt
-
1 cup Chocolate Chips
-
1 large package Strawberry Instant Pudding Mix
-
1 cup Heavy Whipping Cream
-
¼ cup Milk
-
½ teaspoon Vanilla, optional
-
½ bar Ruby Chocolate, or whatever chocolate you like

Sprinkles

Chopped Walnuts

Easy Strawberry Bavarian Cream filling

Brownies
Preheat oven to 350 degrees. Line a square 10x15" baking sheet with a parchment paper or spray with baking spray.
In a large microwave-safe bowl, combine the chocolate and butter. Microwave on high in 20-30 second bursts, stirring well in between heat until melted and smooth.
Whisk in cocoa powder.
Add granulated sugar and brown sugar, whisking well to combine.
Add eggs and vanilla, beating well either by hand with a whisk or using an electric mixer.
Sprinkle the flour and salt over the brownie batter and gently stir it in with a spatula.
Stir in chocolate chips.
Pour the brownie batter into the prepared baking sheet and spread into the corners.
Bake for 17-20 minutes, until a toothpick inserted into the center of the brownies comes out mostly clean with only a few crumbs attached. Be sure not to overbake.
Let Brownies cool completely before cutting with cookie cutter.
Easy Strawberry Bavarian Cream
- While Brownies are baking, make the Strawberry Bavarian Cream by combining Pudding mix, heavy cream, and milk into a medium mixing bowl.
Beat on low speeds unitl it starts to thicken and gradually increase speed until it is thick enough for piping or spreading.
Assembly
- Take bottom piece of brownie and pipe filling, the top with another brownie piece.
Melt chocolate (Ruby Chocolate melts at about 30 seconds on high) and drizzle on brownie.
Sprinkle with chopped walnuts or Sprinkles.

*If you are not making filled/sandwiched Brownies, you can bake these brownies in a 9x9" pan for 30-35 minutes.
