Easy Microwave Lemon & Lime Curd

This recipe has never failed me for making delicious Lemon and Lime Curd!
Ingredients

1/2 cup Butter, melted and slightly cooled

1 cup Granulated Sugar

3 large Eggs
-
1 large Egg Yolk
-
1 cup Freshly Squeezed Lemon Juice or Lime Juice (you will need more limes then lemons)

Zest of 1 Lemon or Lime, optional
Directions
In a large microwave-safe bowl (you will need a large bowl), whisk together the melted butter and granulated sugar.
Add the egg yolk and eggs, and mix until well combined, then add the lemon juice and zest and mix until fully combined.
Microwave on high in 1-minute increments, making sure to remove the curd from the microwave and mix well after each increment. The lemon curd is done once it coats the back of a spoon, it usually takes about 5 minutes. Yours may take a little more or a little less time.
Remove from the microwave and pour the curd through a fine mesh strainer into a clean, heat-safe container.
Place a piece of plastic wrap directly on top and allow to cool completely. Then pour into a sealable jar and refrigerate until ready to use.
