Eggplant Pesto Flatbread Pizza

I've got another savory recipe for you. This is a great dinner recipe. My family often requests this one, bonus it's not super difficult! I don't have a measurement of the cheeses, so add as much or as little as you like. In this family we tend to use a lot as you can see in the pictures.
Just writing up this recipe makes me hungry for it! Give it a try and enjoy!
Eggplant Pesto Flatbread

Here's a pretty easy dinner recipe that's super yummy!
Ingredients

1 small Eggplant
-
1 Naan Flatbread (we like the roasted garlic one)
-
6 oz. Pesto Sauce
-
1 small Onion
-
1 Tomato
-
Feta Cheese, crumbled
-
Mozzarella Cheese, shredded
-
Parmeson Cheese, shredded
-
Salt, to taste
-
Pepper, to taste
-
Garlic Powder, to taste
-
Olive Oil
-
2 Tbsp. Butter
Directions
Preheat oven to 350
Slice Eggplant in half, then slice into 1/2 inch slices. Slice Onion and Tomato.
Place Eggplant slices on sheet pan, drizzle with Olive Oil and sprinkle with Salt, Pepper, and Garlic Powder.
Place Eggplant in oven and roast for 15 minutes.
While Eggplant is roasting, melt butter in pan and add onion. Cook on med/low until starting to brown, or done to desired likeness.
When Eggplant is done roasting, set aside to get flatbread ready.
Place Flatbread on sheet pan, spread half pesto sauce on each Flatbread.
Place 1 layer of Eggplant on each Flatbread (sometimes you will have leftover Eggplant depending on the size you get).
Lay Tomato slices on top of Eggplant slices.
Add as much of the sautéed onion on top of tomato.
I like to sprinkle a little more Salt, Pepper, and Garlic Powder on top of veggies.
Sprinkle as much Feta, Mozzarella, and Parmeson cheese as you like on top of everything.
Place in oven and cook for 15 minutes or until cheese is melted and starting to brown.
Slice and enjoy!
