Soft, chewy sugar cookies with cream cheese filling, cherry pie filling, and graham cracker crumble topping. The are an easy and fun cookie to make.

½ cup (1 stick) Butter, softened
-
2 tbsp Flour
- 8 oz Cream Cheese, softened
-
¼ cup Granulated Sugar
-
1 tsp Vanilla Extract
-
½ Almond Extract (optional)
-
¾ - 1 cup Cherry Pie Filling
- ¼ cup Graham Cracker Crumbs (about 2 graham crackers)
- • ½ tbsp Light Brown Sugar
Cookie Dough
Fillings
Graham Cracker Topping
Directions
- Mix sugar cookie mixture, butter, egg, and flour until fully mixed and add green food coloring. Mix until the mixture is fully green.
Refrigerate dough while you make the filling and topping for about 15-20 minutes.
Preheat oven to 350 and line cookie sheet with parchment paper.
While the dough is chilling make the cheesecake filling by mixing cream cheese, sugar, vanilla, and almond extract until smooth. Add red food coloring and mix well. Put the cream cheese filling in a piping bag or a Ziploc bag and cut the corner of the bag.
Now make the graham cracker toppings, combine graham cracker crumbs and brown sugar and mix.
Take the cookie dough from refrigerator and take an ice cream/cookie scoop ( I used a 2" one) and scoop cookie dough and place on cookie sheet. Or make 2" size balls, placing them 2" apart on cookie sheet.
Then make a small "bowl" in each of the balls using a teaspoon.
Pipe some cheesecake mixture into each bowl.
Add 2 or 3 cherries on top of the cheesecake mixture.
Bake the cookies 15-20 minutes, until edges start to turn brown and centers are set.
Halfway through the cooking add some of the graham cracker topping and return cookies to the oven.
Cool the cookies on the baking sheet for 10 minutes.
Once they are cool, drizzle cookies with remaining cream cheese mixture and sprinkle with graham cracker topping.
Enjoy!
